Spinach 'n' Bean Tostadas

Ingredients

  • 1/2 cup canned fat-free refried beans (I like the vegetarian)
  • 2 tostada shells, about 1/2 oz each
  • 1/4 cup thawed and well drained frozen chopped spinach
  • 1/4 cup each salsa, shredded lettuce, chopped tomato, and fat-free cheddar cheese
  • 2 tablespoon fat-free sour cream
  • Hot sauce to taste (optional)

Preparation

Step 1

1. Preheat oven to 350 degees F.

2. Spread 1/4 cup refried beans on each tostada shell; top each with 2 tablespoon spinach. Place on baking sheet; bake 5 minutes.

3. Transfer to serving platter; top each with 2 tablespoons salsa, lettuce, tomato, and cheese, then 1 tablespoon sour cream. Serve
immediately, with hot sauce if desired.
