Minestrone Soup

Ingredients

  • 4 cups chicken stock
  • 4 cups water
  • 2 carrots, diced
  • 1/2 medium white onion, diced
  • 2 celery stocks, diced
  • 1 medium potato, peeled and diced
  • 2 zucchini, sliced
  • 1 large bunch of spinach
  • 1 can whole tomatoes (796 mL)
  • Parmesan cheese
  • 1/2 tsp salt
  • 1 can white beans, drained
  • 1/2 cup pesto

Preparation

Step 1

1. Chop all vegetables and place in a stock pot with canned tomatoes, salt, water and stock. Bring to boil and turn heat to low. Simmer for one hour until vegetables are starting to soften while keeping their shape.

2. Add the beans and cook for 10 minutes until they are cooked through. Remove from heat, add the pesto.

3. Cook spinach in microwave and add to bowls of soup. Top with parmesan cheese.
