Southern Grits Casserole

Ingredients

  • 4 cups water
  • 1 cup quick-cooking grits
  • 4 eggs, lightly beaten
  • 2 cups shredded cheddar cheese
  • 1/2 milk
  • 1/4 cup sliced green onions
  • 1 fresh jalapeno pepper, seeded and finely chopped
  • 1/2 tsp garlic salt
  • 1/4 tsp ground white pepper

Preparation

Step 1

1. Preheat oven to 350. Grease a 2-QT casserole and set aside.
2. In a large saucepan, bring the water to a boil. Slowly stir in grits. Gradually stir about 1 cup grits mixture into eggs. Stir egg mixture into the remaining grits mixture in saucepan. Stir in cheese, milk, 1/4 cup green onions, jalapeno pepper, garlic salt, and white pepper. Transfer mixture to casserole.
3. Bake, uncovered, for 45-50 minutes.
