Ingredients
- 1 cup port wine
- 1 8 ounce package of cream cheese
- 8 ounces sharp white Cheddar, shredded (about 3 cups)
- 1/4 cup dried cherries, chopped
- 3 tablespoons minced fresh chives, divided
- 2 teaspoons port wine
- 1/8 teaspoon ground nutmeg
- Back pepper and salt to taste
- 3/4 cup chopped nuts
Preparation
Step 1
Boil one cup of port in a small saucepan until reduced to 2 tablespoons.
Combine cream cheese, Cheddar, cherries, 1 tablespoon chives, 2 teaspoons port, and nutmeg with a mixer; season with papper and salt. Stir port syrup into cheese mixture just to swirl (do not fully combine); roll into a 10 to 12 inch log.
Combine nuts and remaining 2 tablespoons chives; place on a long strip of plastic wrap., Roll cheese log into nut mixture to coat, then wrap in plastic and chill until ready to serve. Let log come to room temperature before serving.
