Corned Beef, Cabbage & Potatoes

Ingredients

  • beef:
  • 3 lb corned beef
  • 4 carrots - cut into 2 inch pieces
  • 1 or 2 medium onions - chopped
  • 1 small head cabbage - roughly chopped
  • 2 cups apple juice
  • 1 cup water
  • Potatoes:
  • 1 1/2 lb petite red potatoes - sliced in 1/2
  • 1/2 stick butter - softened
  • 1 tablespoon garlic - chopped
  • 2 tablespoons fresh parsley - chopped
  • salt & pepper to taste

Preparation

Step 1

beef:
Place carrots & onion in bottom of crock pot, place corn beef on top, put cabbage around beef. Add apple juice, water, & contents of the spice packet to crock pot. Cook on low 6 to 8 hours.

Potatoes:
Bring a large pot of salted water to a boil, add potatoes, cook until tender - about 12 to 15 minutes. Drain potatoes, put potatoes in serving dish or back into pot.

Combine butter, garlic, and parsley - add to potatoes - stir carefully until combined.
