Corned Beef, Cabbage & Potatoes

Ingredients
- beef:
- 3 lb corned beef
- 4 carrots - cut into 2 inch pieces
- 1 or 2 medium onions - chopped
- 1 small head cabbage - roughly chopped
- 2 cups apple juice
- 1 cup water
- Potatoes:
- 1 1/2 lb petite red potatoes - sliced in 1/2
- 1/2 stick butter - softened
- 1 tablespoon garlic - chopped
- 2 tablespoons fresh parsley - chopped
- salt & pepper to taste

Step 1
beef:
Place carrots & onion in bottom of crock pot, place corn beef on top, put cabbage around beef. Add apple juice, water, & contents of the spice packet to crock pot. Cook on low 6 to 8 hours.
Potatoes:
Bring a large pot of salted water to a boil, add potatoes, cook until tender - about 12 to 15 minutes. Drain potatoes, put potatoes in serving dish or back into pot.
Combine butter, garlic, and parsley - add to potatoes - stir carefully until combined.
