Oysters Denise

Ingredients

  • 1/4 c butter
  • 2 tbsp finely chopped parsley
  • 1-2 garlic cloves finely chopped
  • 1 green onion chopped
  • 1 tbsp flour
  • 2/3 c chicken broth
  • 1 tbsp cream
  • 1 c chopped fresh spinach
  • 1 tsp pernod
  • 1/4 c parmesan, romano or asiago
  • fresh breadcrumbs

Preparation

Step 1

Melt butter, sautee parsley, green onion and garlic.
Whisk in flour, stirring until thickened. Add chicken broth and
cream. Once mixture begins to thicken and spinach and pernod,
stir until spinach wilts.
Spoon mixture onto shucked oysters, sprinkle with a little cheese
and top with bread crumbs.
Bake at 400F for 10 minutes or until bubbly.
