Americanized Irish Soda Bread

Ingredients

  • 4 cups all-purpose flour
  • 1 cup white sugar
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 pint (16 oz.) sour cream
  • 1 cup dried currants (okay to use raisins)
  • 1 tablespoon caraway seeds (optional)

Preparation

Step 1

Preheat oven to 325 F. Grease two 8-by-4-inch loaf pans.

Mix the flour, sugar, baking soda, baking powder and salt. Add the eggs, sour cream, caraway seeds and currants, and mix until just combined. The batter will be very thick. If this bothers you, add a tiny bit of milk until you are happy. Distribute batter evenly between the two pans.

Bake loaves at 325 F for 1 hour. Best when served hot right out of the oven, with butter.
