Pork Chops with Pineapple and Rice

Ingredients
- 2 cups long-grain white rice
- 2 tbsp vegetable oil
- 4 bone in pork chops
- course salt and pepper
- 1 pineapple, peeled, cored and cut into 1/2 inch pieces
- 1 jalapeno pepper diced
- 1 tbsp soy sauce
- 1/4 cup packed fresh cilantro

Preparation
Step 1
Cook rice. Meanwhile in large skillet heat oil over medium-high. Season pork on both sides with salt and pepper. Cook until done and then tent with foil (on plate).
Reduce heat to medium. Add pineapple and jalapeno to skillet. Cook, stirring until pineapple is tender. Remove from heat and stere in soy sauce.
Serve pork with pineapple mixture, rice and and cilantro.
