Mini-Mexi Pizza Quesadas

Really good as appetizer or a meal

Ingredients

  • 2 store bought pizza crust-thin
  • Salsa
  • 1 cube of butter
  • Mushrooms, 1 cup chopped
  • 2 Green peppers, chopped
  • 1/2 lb. deli ham, chopped
  • 2 cups shredded cheese
  • Lettuce, shredded
  • Sour cream
  • Green onion, chopped
  • Sliced black olives (optional)

Preparation

Step 1

Heat oven to broil. With a round biscuit cutter, cut circles out of the pizza crust. Place the circles onto a backing sheet and put in the oven for about 5 minutes, or until lightly browned. You can cut small or big depending on whether you are using as an appetizer or as a meal. Melt the butter in a small sauce pan and add to it the chopped mushrooms and green peppers. Saute until crisp tender. While the vegetables are sauteing, spread a layer of salsa on each circle. Then spoon the mushroom/green pepper mixture onto each circle as your next layer. Put back in the oven for 15 minutes to heat the layers up with the crust. Remove from oven and top with chopped ham and cheese. Put back in oven until cheese melts. Remove from oven and layer with shredded lettuce, green onions and a dollup of sour cream. You can put a few sliced black olives on top of sour cream for presentation.
