Chicken Cattitore

Ingredients

  • 8 chicken breast halves
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • flour
  • 1/3 cup olive oil
  • 1 large chopped onion
  • 3-4 cloves garlic minced
  • 1/2 lb fresh mushrooms (cut in half)
  • 2 16 oz cans whole tomatoes (quartered)
  • 1/2 cup dry wine
  • 3 bay leaves
  • 1 tsp dried whole thyme
  • 1 tsp dried whole oregano
  • 1/4 tsp pepper
  • 2 medium green peppers (cut in strips)
  • spaghetti

Preparation

Step 1

Sprinkle chicken with salt and pepper. Cover with flour. Heat oil in dutch oven over med-high heat. Add chicken, saute 4-5 minutes on both sides or until golden brown. Remove chicken and drain on paper towel. Add onion and garlic to dutch oven, saute over med heat 5 minutes. Stir in mushrooms and next 6 ingredients. Add chicken and bring to a boil. Reduce heat and simmer, uncovered for 30 minutes stirring occasionally. Stir in green peppers. Cook additional 30 minutes. Remove bay leaf and serve over spaghetti.
