Cinnamon Roll Apple Pie

Ingredients

  • 2 9-inch pie crusts
  • 1/2 cup brown sugar
  • 2 tsps. cinnamon
  • 1/2 tsp. vanilla extract
  • 4 Tbsps. butter, melted
  • 4 Granny Smith apples, peeled
  • 1/2 cup granulated sugar
  • 3 1/2 Tbsps. water
  • 2 Golden Delicious apples, peeled
  • 1/2 cup apricot preserves
  • Additional butter, to taste

Preparation

Step 1

1. Roll 2 pie crusts together, roll out to 1/2-inch thickness
2. In a small bowl, mix brown sugar, cinnamon, vanilla extract, and melted butter into a smooth paste.
3. Spread cinnamon mixture evenly on pie crust, then roll tightly.
4. Slice rolled pie crust evenly into 1/2-inch rounds, then lay on wax paper with swirl facing up.
5. Add another layer of wax paper, then press and roll cinnamon rolls until flattened to 1/4-inch thickness.
6. Line the bottom of a pie plate with flattened rolls, crimp edges with a fork. Set aside to chill.
7. Core and chop Granny Smith apples. Cook with sugar and 2 Tbsps. of water until soft and chunky. Set aside.
8. Core Golden Delicious apples and slice finely.
9. Fill pie crust with cooked apple mixture, and top with thin layer of sliced apples.
10. Brush with small amount of melted butter.
11. Bake 45 to 50 minutes at 350 °F.
12. Meanwhile, heat apricot preserves and remaining water in a small saucepan, stirring until smooth.
13. When pie is done baking, immediately brush with apricot preserves and serve hot. Enjoy!
