Ingredients
- 1 cup granulated sugar
- 1 cup firmly packed light brown sugar
- 1/2 cup butter, softened
- 1/2 cup vegetable shortening
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups granola
- 1 cup sweetened dried cranberries
- 1 cup sweetened flaked coconut
Preparation
Step 1
Preheat oven to 350 degrees. Coat baking sheets with cooking spray. Combine granulated sugar, brown sugar, butter and shortening in a large bowl. Beat with an electric mixer on high speed until light and creamy, about 3 minutes. Add eggs and vanilla; beat well.
Combine flour, baking soda, baking powder and salt in a medium bowl. Add to sugar mixture; beat on low speed until well blended. Stir in granola, cranberries and coconut.
Drop dough by heaping tablespoons onto prepared baking sheets.
Bake cookies until golden and set in center, 12-15 minutes. Remove cookies from baking sheets; place on wire racks to cool.
