Chili Lime Squid

Ingredients

  • 1 lb squid cleaned
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tbsp oyster sauce
  • 1/4 tsp Thai red curry paste
  • 2 tsp sugar
  • 2 tbsp vegetable oil
  • 3 cloves garlic coarsely chopped
  • 1/4 c coriander leaves ( if you can't find fresh, use 1/4 tsp ground coriander)

Preparation

Step 1

In small bowl mix fish sauce thru to sugar. Stir until smooth.

Heat large skillet over high heat. Add oil, when hot, add garlic and stir fry until golden.
Remove from heat if it gets too hot.
Pour in mixture and stir fry until aromatic. Add squid and fry for 90 seconds or until opaque.
Garnish with coriander if using fresh. (Add ground to fish sauce mixture if using that.)
Serve with crusty bread to soak up sauce.
