Ingredients
- Salmon:
- Large salmon side (Costco) cleaned and skinned
- 2 tbsp olive oil
- 1 cup coarse chopped leeks (white only)
- 1/2 cup chopped parsley
- 1/2 cup chopped dill
- 1/2 cup dry white wine
- Dill Sauce:
- cooked dill, parsley, leeks
- 2 tbsp. low fat yougurt
- 2 tbsp. light mayo
- salt and pepper to taste
- Dijon Mustard Sauce:
- 2 tbsp light mayo
- 1 clove garlic minced
- 1/4 tsp Worcestershire sauce
- 3-4 drops lemon juice
- 3/4 tbsp dijon mustard
Preparation
Step 1
Salmon:
Make a boat out of foil and put fish in it and place foil on cookie sheet. Brush salmon with olive oil. Spoon leeks, parsley and dill around fish and on top of fish. Pour wine on top. Place the fish on middle rack of oven. On bottom rack of oven place a large foil pan half filled with water. Bake at 350 for about 30 min or until slightly opaque not bright orange. Depends on size of fish. Check at 20 min. Clean off all veggies and chill in fridge.
Dill Sauce:
Mix in cuisinart with some light mayo and non-fat yogurt. Add salt and pepper to taste.
Dijon Sauce:
Mix all items together and chill. Can be doubled.
