Cookies - Pecan - From Emily - GF

Ingredients

  • 2 cups pecan meal (I found a big bag of pecans at Costco and then put them in the food processor until they were coarse crumbs.
  • 2/3 cup sugar (I think you can do a bit less)
  • 1/2 tsp vanilla
  • dash salt
  • 2 egg whites
  • 1/3 cup jam, cherries, etc.

Preparation

Step 1

Preheat oven to 350.
Mix everything together except the jam. Roll dough into small balls (I used cookie scooper but they came out a bit big-I think they might cook more evenly if you go slightly smaller)
Place balls on cookie sheet (definitely use parchment paper-since they don't have butter in them, they stick!) and indent each in the middle. Fill indentation with jam.
Bake at 350 for 15-20 minutes.
