Pineapple Lime Mold

Ingredients

  • 1 1/2 cup cold water
  • 1 ( 3 oz.) pkg. lime jell-o
  • 1 tlb. lemon juice
  • 1 ( 8 oz.) pkg. cream cheese, softened
  • 2 ( 8 oz.) cans crushed pineapple, drained
  • 1 1/2 cup miniature marshmallows
  • 1/2 cup chopped nuts ( pecan or walnut)

Preparation

Step 1

BOIL 1 cup water. IN a large bowl add lime jell-o. POUR in boiling water, stirring constantly to dissolve, about 2 min.
ADD 1/2 cup cold water and lemon juice. BLEND in cream cheese. CHILL until thickened, but not set, about 1 1/2 hours.
FOLD in pineapple, marshmallows, and nuts. POUR into 1 qt. mold and chill until firm, about 2 hours.
UNMOLD by placing mold in warm water for 10 - 15 seconds. INVERT mold onto serving platter. SURROUND with fresh lettuce. SERVE...
