BBQ Brunch

Ingredients

  • Canadian Bacon:
  • bacon slab
  • salt and pepper
  • olive oil
  • brown sugar
  • allspice
  • cinnamon
  • pinch nutmeg
  • pinch red pepper flakes
  • Hashed Brown Potatoes:
  • chunk style hashed browns
  • diced green onion
  • salt and pepper
  • butter
  • paprika
  • Eggs in Muffin Cups:
  • eggs
  • butter
  • diced red and green bell peppers
  • chives
  • salt and pepper
  • Sliced Apples
  • sliced green apples
  • butter
  • cinnamon
  • brown sugar
  • pinch nutmeg
  • Fruit Kabobs:
  • pound cake
  • bananas
  • pineapple
  • strawberries
  • melted butter
  • cinnamon
  • sugar
  • powered sugar

Preparation

Step 1

Canadian Bacon:
Make rub with all ingredients except the slab of bacon. Rub over meat and wrap in foil. Refrigerate 3 to 4 hours. Smoke on BBQ over med high coals until heated thru.

Hashed Brown Potatoes:
Spray foil with pam, place potatoes, onions, salt and pepper in center of foil. Put tabs of butter on top of potato mixture and sprinkle with paprika. Fold into pouches. Cook on grills approx. 25 minutes. Turn over pouches for last 5 minutes.

Eggs In Muffin Tins:
Spray muffin tins with pam. Put 1 tbs butter into each tin. Crack 1 to 2 eggs on butter. Sprinkle with bell peppers, chives, salt and pepper. Grill on high 3 to 4 minutes.

Sliced Apples:
In skillet cook apples and remaining ingredients until apples are tender.

Fruit Kabobs:
Cut pound cake into chunks. Alternate cake with fruit on skewer. Brush with melted butter and sprinkle with cinnamon/sugar mixture. Cook on coals with the lid opened for 1 to 2 minutes. Dust with powered sugar.
