My girlfriend brought this dish to my family after the birth of my second child - it was a huge hit with the adults and kids alike! We used up the leftovers by creating a 'dip' and scooping with tortilla chips. So delicious!!

Ingredients

  • 1 Cup Uncooked Rice
  • 1 can black beans, drained
  • 10 oz bag frozen corn
  • 1 small can diced green chilis
  • 2 cups salsa
  • 1 1/2 tsp Cayenne pepper
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1 tsp dried Oregano
  • 2 tsp dried Cilantro
  • 1 C. Chicken Broth

Step 1

- Mix together in casserole pan - 9 x 13

- Add 3-4 large uncooked chicken beasts on top, season with more salt/pepper

-Bake 375 for 60 min

-Top with crushed tortilla chips and 1.5 - 2 cups shredded Mexican cheese.

-Bake 5 more min.
