Ingredients
- FROSTING:
- 2 1/2 cups flour
- 1 1/2 cups sugar
- 4 t cinnamon
- 1 t salt
- 1 1/2 t baking soda
- 4 eggs, lightly beaten
- 1 t vanilla
- 1 cup canola oil
- 3 cups grated carrots
- 1/2 cup raisins
- 16 oz. cream cheese, room temp
- 2 sticks butter, room temp
- 3 t vanilla
- 2 cups powdered sugar
- 1/2 cup chopped pecans (optional)
Preparation
Step 1
CAKE:
Preheat oven to 350. Grease and flour 3 9" cake pans.
Whisk together the flour, sugar, cinnamon, salt, and baking soda and set aside.
In a separate bowl, whisk eggs, vanilla, and canola oil.
Pour the wet ingredients into the dry ingredients and stir till combined.
Stir in carrots and raisins.
Pour into cake pans and bake 20-25 minutes.
Remove from oven and let cool completely before frosting.
FROSTING:
Beat the cream cheese, butter, and vanilla until fully incorporated.
Add powdered sugar and mix till smooth and creamy.
Frost cake and sprinkle additional chopped nuts between the layers and atop.
