Lemon Fluff

My mother has been making this dessert all my life. There's always room for Jello!
Ingredients
- 2 1/2 cups graham cracker crumbs
- 1 1/4 cup sugar
- 1/2 cup buter, melted
- 1 box Jello (4oz size)
- 1 3/4 cups hot water
- 1 14oz. can evaporated milk, frozen
- 1/4 cup lemon juice
Preparation
Step 1
1. Combine cracker crumbs, 1/4 cup sugar and the melted butter. Press 3/4 of the crumb mixture into the bottom of a 13x9-inch pan. Chill while making the Jello.
2. Combine the jello with the hot water. Stir until Jello is completely dissolved. Chill Jello until partially set.
3. After setting, whip the jello until light and foamy. Set aside.
4. In a separate bowl, whip together the evaporated milk, 1 cup sugar and the le,mon juice. Whip until light and foamy.
5. Fold the milk into the Jello. Do not over mix. Pour mixture on top of cracker crumbs. Spread remaining crimbs over top of Jello. Refrigerate until completely set.
