Mexican Cheese Crisps
- Flour tortillas (the thicker the better)
- Olive oil
- Monterey/Colby Jack cheese mixture, shredded
Brush tortillas with olive oil lightly covering up to 1” from edges. Bake in 300º oven until tortillas are lightly browned being careful that edges do not brown too much. Remove from oven and cover lightly with cheese. Return to oven just until cheese has barely melted.
