Tuscan Style Stuffed Pork Chops

Ingredients

  • 2 Tbsp olive oil
  • 2 tsp clove garlic, minced
  • 6 sun-dried tomatoes packed in oil, chopped
  • 10 oz fresh baby spinach
  • 1/4 tsp dried thyme
  • Salt & pepper to taste
  • 1/4 cup crumbled goat cheese
  • 1/3 cup cream cheese, cubed
  • 4 Bone-In Pork Loin Chops (393), thawed, with 2' pocket cut in side
  • 1 cup chicken broth
  • 1/2 cup white wine
  • 1 Tbsp lemon juice
  • 2 tsp Dijon mustard
  • 1 Tbsp butter

Preparation

Step 1


Preheat oven to 350°

Sauté garlic in 1 Tbsp of olive oil over medium heat for 1 minute.

Stir in tomatoes, spinach, thyme, season to taste. Continue to cook 2-3 minutes.

Mix in cheeses and set aside.

Slice a side pocket into the thickest portion, leaving three sides intact of pork chops.

Fill pockets with spinach mixture. Season chops with salt and pepper.

Heat remaining olive oil in large skillet over medium-high heat.

Sear chops 2-3 minutes per side until golden.

Transfer to a baking sheet and bake 16-18 minutes until cooked through.

Stir in broth, wine, lemon and mustard into skillet over medium-high heat.

Continue to cook 8-10 minutes or liquid is until reduced by half.

Whisk in butter and drizzle sauce over chops
