Beef, Wok This Way Asian Beef Stir-fry

Ingredients

  • 1 lb sirloin steak, trimmed of fat, thinly sliced
  • 3 tablespoons Asian fish sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon grated gingerroot
  • 1 teaspoon mince garlic
  • 1/2 teaspoon crushed red pepper flakes
  • 1 tablespoon peanut oil or canola oil
  • 1 large red bell pepper, seeded and cut into strips
  • 1 medium red onion, sliced
  • 20 or more fresh basil leaves

Preparation

Step 1

Place steak slices in a shallow bowl or casserole dish. In a small bowl whisk together fish sauce, soy sauce, brown sugar, gingerroot, garlic, and crushed red pepper flakes. Pour over steak. Marinate steak at room temp for 30 minutes.

Heat oil in a large, non-stick wok over medium-high heat. Remove steak from marinade and shake off excess. Reserve marinade. Cook steak in hot oil just until cooked through, stirring constantly. Remove steak from wok and set aside. Add red pepper and onion to wok. Cook and stir for about 5 minutes, until veggies are tender. Return beef to wok and add basil and reserved marinade. Cook 1 more minute, until basil leaves are wilted and beef is hot.
