Ingredients

  • 2

    eggs

  • 1

    cup brown sugar

  • 3/4

    cup applesauce

  • 1 1/2

    cups whole milk

  • 2

    tsp vanilla

  • 1/2

    tsp salt

  • 1

    Tablespoon cinnamon

  • 3

    cups rolled oats

  • 2

    tsp baking soda

Directions

Combine all ingredients, stir and let sit for 30 minutes. Grease muffin tins and add 1/4 cup for each muffin. Add favorite toppings, I used pecans and dried cranberries. Bake at 350 degrees for 30 minutes. ****I cut brown sugar to 3/4 cup and used 1% milk. Next time I will use a sugar replacement, unsweetened applesauce. These items were not readily available to me when I decided to try these out.
