PUMPKIN ZUCCHINI SPICE BREAD

Ingredients

  • 1 1/2 cups whole grain pastry flour
  • 1 1/2 cups of all-purpose flour
  • 2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. ground cloves
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 3 large eggs
  • 1 cup caned solid-pack pumpkin
  • 1 cup packed brown sugar or 1/2 cup honey
  • 1/2 cup (1 stick) trans-free margarine, softened
  • 1 tbsp. vanilla extract
  • 2 cups shredded zucchini
  • 1/2 cup finely chopped pecans

Preparation

Step 1

Preheat over to 350 deg. Coat a 9 by 5 inch loaf pan with cooking spray. In a large bowl, combine, nutmeg,cloves, salt, baking powder, and baking soda. In a medium bowl, whisk together the eggs, pumpkin, brown sugar, margarine, and vanilla until light and fluffy. Stir in the zucchini. Stir into he flour mixture just until blended, then fold in Pecans.
Pour into the prepared pan. Bake for 60 to 70 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack for 10 minutes. Remove from the pan and cool completely.
