Local Style Beef Curry Stew

Ingredients
- 1 T. cooking oil
- 3 lb. beef, cut into one inch thick cubes
- 1 onion, chopped
- 2 (14.5 oz) cans beef or chicken broth
- 2 bay leaves
- 1/4 c. curry powder
- 1 T. garlic powder
- 1-1/2 t. salt
- 2 large potatoes, cut into large chunks
- 2 carrots, cut into two-inch chunks
- 3 celery stalks, cut into two-inch pieces
- 1/4 to 1/2 c. potato flakes

Preparation
Step 1
In pressure cooker pot, heat oil. Add beef and brown on SAUTE mode.
Add the rest of the ingredients, turn on stew, meat and quick mode and cook for 40 minutes.
When done, let rest for 10-15 minutes, release pressure, open lid and add potato flakes. Stir to thicken.
