Ingredients
- 8 oz penne pasta
- fresh basil leaves
- fresh thyme
- 1 onion, chopped
- 3 garlic cloves, minced
- 1/2 lb hot Italian sausage, casings removed
- 1/2 lb mild Italian sausage, casings removed
- 1 large can whole Italian tomatoes
- 1 lb mozarella, sliced
- 1/2 C Parmesan

Preparation
Step 1
Brown sausage in olive oil, add onions and garlic and cook until onions are tender. Crush or finely chop the tomatoes and add to the meat with the chopped herbs. Simmer for 15-20 minutes.
Cook the pasta according to package directions, drain but reserve 1/2 cup pasta water and add it to the sauce. Mix the pasta with the sauce and pour 1/2 of it into an oiled 9 x 13 inch casserole. Top with 1/2 of the mozarella slices and 1/2 of the Parmesan; add the remaining sauce/pasta mixture and bake at 350 degrees until sauce bubbles. Remove from oven, cover with the remaining mozarella and sprinkle with Parmesan; return to the oven just long enough to melt the cheese. Allow the casserole to sit for 10 minutes before serving.
