Fricase de Pollo or Chicken Fricassee Boricua Style

Ingredients

  • 1 1/2 tablespoon olive oil
  • 3 1/2 lb. chicken (your favorite pieces)-seasoned with Goya adobo seasoning
  • 1/2 cup diced onion
  • 1/2 cup diced green bell pepper
  • 2 1/2 tablespoons sofrito
  • Few sprigs fresh cilantro
  • 1/2 cup of diced cooking ham
  • 4 garlic cloves, minced
  • 1 bay leaf
  • 1 packet Goya sazon seasoning
  • 1/2 teaspoon dried oregano
  • 1/2 cup green olives with pimentos
  • 2 tablespoons capers
  • 1 cup of white win (or 1 cup of white grape juice + 1 tablespoon white vinegar)
  • 1 cup tomato sauce
  • 1 large bay leaf or 2 small bay leaes
  • 1 1/4 cup water
  • 3 medium russet potatoes, cut in chunks
  • roasted red bell peppers for garnish
  • frozen sweet green peas
