Ingredients
- 1 1/2 tablespoon olive oil
- 3 1/2 lb. chicken (your favorite pieces)-seasoned with Goya adobo seasoning
- 1/2 cup diced onion
- 1/2 cup diced green bell pepper
- 2 1/2 tablespoons sofrito
- Few sprigs fresh cilantro
- 1/2 cup of diced cooking ham
- 4 garlic cloves, minced
- 1 bay leaf
- 1 packet Goya sazon seasoning
- 1/2 teaspoon dried oregano
- 1/2 cup green olives with pimentos
- 2 tablespoons capers
- 1 cup of white win (or 1 cup of white grape juice + 1 tablespoon white vinegar)
- 1 cup tomato sauce
- 1 large bay leaf or 2 small bay leaes
- 1 1/4 cup water
- 3 medium russet potatoes, cut in chunks
- roasted red bell peppers for garnish
- frozen sweet green peas
