Ingredients
- 1 Japanese eggplant (or a very small one)
- 2 zucchini
- 2 yellow squash
- 1 red onion
- 2 tomatoes
- 1 potato
- 4 cloves garlic
- 1/4 cup olive oil
- 1 can diced tomatoes
Preparation
Step 1
1. Cut all veggies into large chunks, stir in olive oil and diced tomatoes.
2. Bake with cover on 20 min in 400 degree oven
Take cover off bake an additional 1 hour or till potatoes are done.
