Ingredients
- 1 cup potatoes, mashed
- 1 cup milk
- 1 - 3 cups flour
- 1 tsp. salt
- 3 Tbsp. melted shortening
- 3 tsp. vanilla
- 1 cup sugar
- 5 tsp. baking powder
- 2 beaten eggs

Preparation
Step 1
Using boiled potatoes, mash the potatoes with skin on until there are no lumps.
• Add to the mashed potatoes, eggs and milk. Mix.
• Add sugar and baking powder. Mix
• Add salt, melted shortening and vanilla. Mix.
• Add just enough flour to make a soft dough (approximately 1 cup). Mix thoroughly with hands.
• On a floured surface, press flat (be careful not to make it too thin).
• Cut. Put into 375° F oil and cook until golden brown.
• Drain onto paper towel.
• Sprinkle with powdered sugar or a powdered sugar glaze.
