BAKED BEANS (BOURBON BACON)

Ingredients

  • 1 lb. dry great northern beans, soaked overnight in water and then drained.
  • 5 cups chicken stock
  • 1 small onion, diced
  • 1 tbsp. garlic, minced
  • 3/4 cup ketchup
  • 3/4 cup BBQ sauce
  • 1 1/2 tbsp. tomato paste
  • pinch or two of smoked paprika
  • 1/2 cup brown sugar
  • 1 tbsp. molasses
  • 12 oz. apple smoked bacon, crisped and chopped
  • 2-3 tbsp. maple syrup
  • 1/4 cup fresh cilantro, finely chopped
  • 2 tbsp. bourbon
  • pinch of salt and pepper

Step 1

Add the drained beans to a large pot. Add in the chicken stock, onion, garlic, salt and pepper, ketchup, BBQ sauce, tomato paste, and paprika.

Reduce the heat to medium-low, and simmer the beans for about 4 hours, stirring occasionally (you may need to add the additional water during the last part of the cooking process if the beans become too thick), or until the beans are tender, turn off the heat; add in the crisp and chopped bacon, the maple syrup and the bourbon, and stir to combine.

Taste the sauce and add more salt and pepper if necessary. Serve wsrm along side your best BBQ dishes.
