Bacon Stuffed Mushroom Crowns

Ingredients
- 40 medium mushrooms
- 1/2 pound bacon, crisply cooked and crumbled
- 1 cup shredded Swiss cheese
- 1/2 cup butter, softened
- 1/2 cup corn chips, crushed
- 1/2 tsp. onion powder
- 1 Tbsp. dry red wine

Preparation
Step 1
Once you have cooked the bacon, reserve 4 Tbsp. of your bacon grease to sauté the caps. Remove stems from mushrooms and chop. Combine the stems with the remaining ingredients. Sauté caps in grease on both sides until golden brown. Fill each cap with filling mixture. Place caps on a baking sheet, stuffing side up. Broil for 5-7 minutes or until light brown and bubbly.
