Ingredients
- 2 cups cooked quinoa
- 2 tbsp capers
- 1/3 cup sliced Kalamata olives
- 1/4 cup chopped cherry peppers (hot or sweet)
- 1/2 cup crumbled feta cheese
- zest and juice of 1 lemon
- 3 tbsp minced fresh oregano
- 2 cloves minced garlic
- 1 tbsp red wine vinegar
- black pepper, to taste
- greens, to serve
- olive oil, to taste

Step 1
1. In a large bowl combine cooked quinoa, capers, Kalamata olives, chopped cherry peppers, feta cheese, lemon zest and juice, oregano, garlic, red wine vinegar, and a few good grinds of black pepper.
2. Serve over a bed of greens and drizzle with olive oil.
