Black Bean and Sweet Potato Soup

Ingredients

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1/2 t. Cumin
  • 1/2 t. Coriander
  • 2 (14 oz) cans black beans, rinsed and drained
  • 1 (14 oz) can diced tomatoes
  • 1/4 t. Pepper
  • 4 C. Chicken broth
  • 2 sweet potatoes, peeled and chopped
  • 1 C. Corn

Preparation

Step 1

Sauté onions and garlic in little water until soft. Add all ingredients in slow cooker and cook on low for 8 hours or until sweet potatoes are tender.
