Chicken and Sausage Gumbo

Ingredients

  • 1 cup veg oil
  • 6 qtz water
  • 2 cups flour
  • 2 lbs smoked sausage
  • 4 cups onions diced
  • 1 large fried chicken
  • 2 cup bell pepper
  • 1 cup green onion
  • 1 cup celery chopped
  • salt and pepper
  • Tony's
  • 10 cloves garlic

Preparation

Step 1

In a heavy pot make dark rowx with oil and flour (color of paper bag)

Add onions, pepper, celery and garlic.
Saute in rowx until veg. soft
Add water, S & P to taste, Tony's

Bring to boil then lower to med. & cook for 2 hours uncovered. After cooking water, add sausage and chicken and bring to boil. Lower temp and cook for 3 hours until meat is tender.

Add chopped green onion before serving.
Serve with rice.

(remove chicken from bones and discard skin, place back in pot)
