Green Beans - Julia Child

Ingredients

  • 10 oz green beans or peas (frozen)
  • 1/2 c chicken stock
  • 1 T shallots, minced
  • 1/4 tsp salt
  • 1 tbsp butter

Preparation

Step 1

Bring the liquid, shallots, salt and butter to a boil in a saucepan. Add partially thawed beans. Cover and boil slowly for 5-6 minutes, tossing occassionally until beans are just tender. Remove cover and rapidly boil off any remaining liquid (5-20 minutes) and correct seasoning.
