Breads: Apple Caramel Pancakes

Ingredients

  • 1 1/2 cups Bob's Red Mill Gluten Free Pancake Mix
  • ! medium to large banana
  • 3/4 cup light vanilla soy milk
  • 1/2 pink lady apple
  • 1 t nutritional flakes
  • 1 t cinnamon
  • 1 t pumpkin or apple pie spice
  • 1 t vanilla
  • Topping
  • 1/2 pink lady apple, finely chopped
  • Caramel Sauce (see recipe for raw caramel)
  • 100 % pure maple syrup

Preparation

Step 1

Blend all ingredients in Vit-a-Mix.
Spray griddle with coconut oil spray.
Pour to desired size of pancake.
Cook until bubbles on top.
Flip and cook until golden brown.
Top with chopped apples.
Drizzle the Maple Syrup and Caramel Sauce over the top.
