Barge Family Sweet Potato Pie

Ingredients

  • 3-4 Lg. sweet potatoes
  • 4 eggs
  • 1/2 cup of butter (softened)
  • 1/2 tsp. salt
  • 2 cups of sugar
  • 1/2 tsp. nutmeg
  • 1 can of evaporated milk (13oz)
  • 1 tsp. vanilla extract
  • (3) 9" deep pie shells

Preparation

Step 1

Boil Potatoes until a for easily pierced through them.
Remove skin from potatoes and mash until smooth.
Stir in vanilla, butter, and sugar.
Beat in eggs one at a time.
Mix in Nutmeg, Salt & milk.
Pour into pie shells and sprinkle lightly with nutmeg.
Place pies on a cookie sheet and bake at 375 for approx 1 hour and 15 minutes. Test center of pies with a knife.
Cool before Serving.
