Slow Cooker Chicken Cacciatore for Two

Cacciatore means "hunter" in Italian, and lucky for you, you'll have no trouble hunting down the ingredients for this palate-pleasing meal. Tangy tomatoes, aromatic herbs, and savory mushrooms in a well-seasoned sauce turn chicken into a rich and rustic main dish perfect for enjoying in front o the fire on a cold night.
Ingredients
- 5 bone-in, skinless chicken thighs
- 1/2 tsp. dried oregano leaves
- 1/2 tsp. dried basil leaves
- 1/2 tsp. salt
- 1/8 tsp. freshly ground black pepper
- 1 onion, chopped
- 1 red bell pepper, sliced
- 1 cup sliced cremini mushrooms
- 3 garlic cloves, minced
- 3 Tbls. tomato paste
- 1 (14 oz.) can diced tomatoes, undrained
- 1 (8 oz.) can tomato sauce

Step 1
1. On a platter, sprinkle the chicken with the oregano, basil, salt and pepper; set aside.
2. In the slow cooker, combine the onion, bell pepper, mushrooms and garlic. Top with the chicken.
3. In a small bowl, mix the tomato paste, tomatoes and tomato sauce. Pour the mixture into the slow cooker.
4. Cover and cook on low for 8 hours, or until the chicken registers 160 degrees F on a meat thermometer, and serve.
