Ingredients

  • Seasonings:
  • 2 Lbs. Veal Scallopini
  • 1-2 Cup Flour
  • 3 Eggs
  • 2 Cups Seasoned Bread Crumbs
  • Olive Oil for Frying
  • Garlic Salt
  • Pepper
  • Parsley
  • Romano Cheese (Grated)

Preparation

Step 1

Preheat Oven to 325 degrees.

1) Place flour, eggs and bread crumbs in 3 separate containers.

2) Add seasoning to floor, egg and bread crumbs. Beat eggs.

3) Bread each piece of veal with flour, than egg and bread crumbs. Place on dish.

4) Heat about 1/4 inch of oil in large frying pan on medium to low setting.

5) When oil is hot add the breaded veal and heat for approx. 3 minutes per side until each side is golden brown. Remove from oil and place on plate which is covered with a paper towel. Add paper towel on top of veal to absorb extra oil.

6) Sprinkle top of veal with romano cheese and add to baking pan; such as a lasagna pan.

7) Repeat steps 5 - 6 until all veal has been braised.

8) Cover pan loosely with foil. Bake in oven for 20 minutes turning veal with tongs after 10 minutes top with romano cheese.
