Ingredients

  • 1

    small onion, diced

  • 1

    lb ground beef

  • 3

    C beef broth

  • 3

    C canned diced tomatoes

  • 3

    C red or green peppers (1-2 peppers)

  • 1

    teas Italian seasoning

  • 1

    C minute rice (cooked)

  • Grated cheese + fresh basil for garnish

Directions

Saute onion, Brown ground beef and drain all fat. Add broth, tomatoes, peppers, onion & seasonings. Simmer about 30 minutes. Add rice and simmer for another 10 minutes. Sprinkle with cheese and basil Serve.
