- 1 small onion, diced
- 1 lb ground beef
- 3 C beef broth
- 3 C canned diced tomatoes
- 3 C red or green peppers (1-2 peppers)
- 1 teas Italian seasoning
- 1 C minute rice (cooked)
- Grated cheese + fresh basil for garnish

Preparation
Step 1
Saute onion, Brown ground beef and drain all fat. Add broth, tomatoes, peppers, onion & seasonings.
Simmer about 30 minutes.
Add rice and simmer for another 10 minutes.
Sprinkle with cheese and basil
Serve.
