Cakes: Apple Coffee Cake (Honey Proof)

Ingredients

  • 4 cups unpeeled, finely chopped apple
  • 1/2 cup orange juice, divided
  • 1 1/2 t cinnamon
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 (8oz) carton egg beaters
  • 1/4 cup skim milk
  • 3 cups sifted flour
  • 2 t baking powder
  • 1/4 t salt
  • 2 1/2 t vanilla
  • 2 T brown sugar
  • Pam

Preparation

Step 1

Combine apples, 1/4 cup orange juice and cinnamon in a bowl and set aside
Cream butter and sugar until fluffy
Add egg beaters, beating 4 minutes at medium speed
Combine remaining orange juice and milk and set aside
Combine flour, baking powder and salt
Add to mixture, alternating with milk
Add vanilla
Pour half batter into 10 inch tube pan sprayed with Pam
Top with half the apples
Repeat
Sprinkle with brown sugar
Bake 350 degrees for about 1 hour
