COCONUT POPCORN

Ingredients
- In a large roasting pan prepare:
- Approximately 30 cups I fill two Tupperware bowls with air popcorn, Then shake out the hulls and seeds before putting in the roasting pan.
- 1 cup coarse chopped pecans
- 1 cup slivered almonds
- 1 cup ribbon cut coconut (found at Fred Myers in the bulk food)
- Layer in a large roasting pan in that order for better mixing
- Nest:
- 1 lb. salted butter
- 1 cup Karo syrup
- 2 2/3 cups white sugar

Step 1
Boil these three ingredients for 3 1/2 minutes. Time from the start of the boil. Turn off the heat and very carefully add 2 tbsp. of vanilla extract (this will cause hissing and spewing of hot liquid so be very careful. I set a paper towel over the pot immediately after adding and wait for the hissing to stop and then sir it in well) Pour over prepared popcorn and mix it in well scraping the bottom of the roaster frequently. Cool on baking sheets, break into chunks when cool and store in zip lock bags.
