Sausage & Potatoes

Ingredients
- 5-6 medium Potatoes or 3 Large Bakers (sliced SUPER THIN)
- 1 can cream of mushroom soup + 1 can Milk (whisked together)
- 1 package Eckrich (Skinless) Smoked Sausage
- 8 oz. (1/2 lb) brick Medium Cheddar Cheese (sliced THIN)
- Cooking Spray or Oil

Step 1
Grease 2 1/2 Qt. Casserole Baking Dish with cooking spray or oil.
Preheat oven to 350-360 degrees (depending on your oven).
Parboil Smoked Sausage in a pan of water on the stove for 9 minutes, drain water off and then slice diagonally into pieces and set aside.
Layer potatoes, sausage and cheese until casserole dish is 1/2 full.
Pour in 1/2 of the soup mixture and spread over top.
Layer potatoes, sausage and cheese again (saving out some cheese for the top) until you run out of ingredients.
Pour in the remainder of soup mixture.
Put remainder of cheese on top.
Bake (uncovered) in oven about 1 hour and 45 minutes to 2 hours (stirring every 20 minutes) until potatoes are tender.
Check potatoes with a meat fork to see if they are done.
This recipe takes about 1 hour for one person to prepare.
