Quick and easy cool weather recipe; my Mom first introduced it to me 10 years ago.
- 1 lb. lean ground beef
- 1 onion, chopped
- 1 lg. can petite diced tomatoes
- 1 can Rotel tomatoes, mild
- 1 can white corn
- 1 can light red kidney beans
- 1 can pinto beans
- 1 pkg taco seasoning
- 1 pkg Ranch dressing mix
Brown ground beef with onion and stir in seasoning packets. Add remaining ingredients and stir well. Bring to a boil, reduce heat and simmer for 1 hour.
Top with grated Mexican cheese blend and sour cream.
Serve with Tostitos and/or cornbread.
