Ingredients

    Pound boneless, skinless chicken breasts

  • 4-6

    Ounces shredded pepper jack cheese

  • 1

    Cup frozen spinach, thawed and drained

  • 2

    Tbsp olive oil

  • 1

    Tbsp bread crumbs

  • Salt and pepper to taste

Directions

1. Flatten the chicken to 1/4 inch thickness 2. In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper. Add the olive oil and bread crumbs. (I usually combine in a food processor). 3. Evenly spoon the mixture onto each of the flattened chicken breasts. 4. Roll each chicken breast up, on the short side 5. Use toothpicks if needed to hold the chicken breasts together at the seams. 6. Place the chicken, seam side down, on a tin foil lined baking sheet. 7. Bake at 350 degrees for approximately 35-40 minutes. 8. Serve whole or sliced like pinwheels. 9. Remove toothpicks before serving.
