Ingredients

  • veggie broth for roasting (or your favorite oil if using oil)

  • 1 cup 1

    cup carrots, chopped

  • 1 cup 1

    cup celery, chopped

  • 1 cup 1

    cup sweet peppers

  • 48 ounces 48

    ounces pure Italian crushed tomatoes (no other ingredients) * may also use fresh tomatoes or a combo of both

  • 1 teaspoon 1

    teaspoon crushed garlic (2-3 cloves)

  • 1/4 cup 1/4

    cup fresh basil

  • Himalayan pink salt and ground black pepper to taste

Directions

Using a food processor chop up carrots and celery, then peppers and tomatoes if using fresh. In a pot, or sauté pan, sauté the carrots, celery and garlic in oil (or veggie broth) until soft. Add the tomatoes, peppers, and basil, then season with salt and pepper to taste. Partially cover and simmer for 30 minutes. Taste and season more if needed.
