Italian Bread Salad

Ingredients

  • For salad:
  • 10 (1-inch-thick) stale Italian bread slices, cut into 1-inch cubes
  • 6 plum tomatoes, chopped
  • 1 small purple onion, chopped
  • 1/4 cup chopped fresh or 1 teaspoon dried basil
  • 1/4 cup chopped fresh or 1 teaspoon dried oregano
  • Balsamic Dressing
  • For Balsamic Dressing:
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Preparation

Step 1

Combine first 5 ingredients in a large bowl.

Whisk together all the balsamic dressing ingredients in a small bowl until well blended. Add to salad, tossing gently.

Let stand 20 minutes before serving.
