One Pan Dinner
Decent recipe. You can't go wrong when you're cooking with tomato, garlic and basil.

Ingredients
- 1 Eggplant, cubed
- 1 onion, sliced
- 2 Garlic cloves, crushed
- 1 T Extra Virgin Olive oil
- 3 c Spinach
- 1 lb Chicken breasts, boneless
- 1 15oz can Diced tomatoes
- 1 T Italian seasoning
- 1 T Basil, fresh,
- 1/2 t Crushed Red pepper
- S&P to taste

Step 1
Heat a large saute pan on medium high & heat oil & garlic.
Add sliced onion & eggplant & let cook for 5 mins, stirring often until onions are translucent & eggplant is somewhat soft.
Cut uncooked chicken into cubes & add to pan.
Let cook 5-7 mins or until fully cooked.
Add spinach. Cook until wilted.
Add diced tomatoes & season.
Mix & simmer for 7-10 mins.
Taste & adjust seasoning as desired.
Serve & enjoy.
