Ingredients

  • Pastry:

  • 1/2

    cup butter

  • 1

    cup boiling water

  • 1

    cup flour

  • 1/4

    tsp. salt

  • 4

    eggs

  • Filling:

  • 1

    pkg. vanilla pudding

  • 1/2

    heavy cream

  • vanilla

Directions

Melt butter in the boiling water on high, when the butter melts turn to low and add the salt & flour. Stir vigorously over the low heat until the mixture leaves the sides of the pan in a ball. Remove from the heat and cool slightly. Add eggs one at a time, beating hard after each addition until mixture is smooth. Drop mixture by spoonfuls onto a cookie sheet. Bake at 325 for 25 minutes. Cool on wire rack. When completely cool, cut a hole in the top. Filling: Prepare pudding as directed, except reduce the milk to 1 1/2 cups. Put wax paper on the surface and refrigerate until chilled. Whip the heavy cream and flavor with vanilla. Fold into the chilled pudding. Fill the pastry and put the top back on. Refrigerate.
